Natamycin, also known as pimaricin and natamycin, was first isolated from Streptomyces natalis in 1955, and its activity is far superior to that of sorbic acid. In June 1982, the U.S. FDA officially approved natamycin as a food preservative and classified it as a GRAS product. Natamycin is a highly effective inhibitor of mold, yeast and fungi. Near white to creamy yellow powder, almost odorless and tasteless. Can contain 3mol of water. The melting point is 280°C (decomposition). Almost insoluble in water, slightly soluble in methanol, soluble in glacial acetic acid and dimethyl sulfoxide.
● anti-fungal agent. It has good anti-mold effect when it is used on the surface of food exposed to the air where mold is easy to proliferate. Used in fermented cheese, it can selectively inhibit the reproduction of mold and allow bacteria to grow and metabolize normally.
