Sodium Pyrophosphate (CAS 7758-16-9) is a multifunctional inorganic compound widely used as a leavening agent, buffering agent, sequestrant, and stabilizer.
Food Industry: Used as a leavening agent in baking powders for doughnuts, biscuits, and cakes; as a water retention agent in meat, seafood, and cheese products; to prevent discoloration in processed potatoes and reduce struvite crystals in canned fish.
Industrial Applications: Functions as a chelating agent and dispersant in water treatment, detergents, and drilling muds; used in metal cleaning, electroplating, and phosphatizing.
Laboratory & Biochemical: Acts as a buffering agent and a protease/phosphatase inhibitor in biochemical assays.
Hazards: Causes serious eye irritation (H319). May cause skin irritation and be harmful if swallowed.
First Aid:
Eyes: Rinse cautiously with water for several minutes. Remove contact lenses if present. Seek medical attention if irritation persists.
Inhalation: Move to fresh air. Administer oxygen if breathing is difficult.
Ingestion: Seek medical attention. Do not induce vomiting unless advised by a physician.
Personal Protection: Use safety spectacles, protective gloves, and a particulate respirator (e.g., type N95) when handling dust.
